How to make Soft and Fluffy Idly

Hey Guys, Good Morning. I am really excited to share this recipe. This is a South Indian traditional dish. You will get wondered if you know this point, It does require a drop of oil. People who are looking after a healthy recipe for breakfast in daily routine, this is the best option I recommend.

Precautions

Keep some distance from fire. Don’t get hurry and don’t touch hot kadai with direct hands

Ingredients

  • Urad Dal 1 cup
  • Idli Rava 2&1/2 cups
  • Salt to taste
  • Baking Soda (optional)
  • Water 50ml
  • oil 2 tbs
  • Green chilies 4
  • Curry leaves (if available)
  • Peanuts 90 grams

Process

Step 1 : First take a mixing bowl, add 1 cup urad dal into it, take another bowl and add Idli rava 2&1/2 cups and clean both the ingredients 2 or 3 times with water then add full water to soak it for 8 hours

Step 2 : After 8 hours, drain water from both the bowls

Step 3 : In this step you should grind soaked urad dal add a little bit fresh water if needed and the grinded one should be soft and stiff (which means it should not be like liquid), after take the grind into a fresh bowl.

Step 4 : Now squeeze the water from soaked idli rava and add into the ginded mix. Now mix both the ingredients well and cover with a lid. Reset it for 8 hours to get fermented.

Step 5 : Add salt to taste to fermented idli batter and little water, baking soda two pinch (for extra fluffiness which is extremely optional) now mix. Leave it for 10 mins

Note : Water should be added as per requirement. Final idli batter should not be too liquid.

Step 6 : Now take the idli batter to the idli making plate.

Step 7 : Add some water to idli vessel and place idli plates into it and cover with lid

Step 8 : Cook under low flame for 15 mins to get perfect soft idli

Step 9 : Idli will be getting ready, meanwhile To make the best combination chutney for idli take a kadai add oil, when oil well heated fry 4 green chilies and little curry leaves take it to a side now fry peanuts 90 grams under low flame for 5 mins then stove off.

Step 10 : Let the ingredients gets cool, then take the fried ones into a mixer and add salt to taste and grind

Step 11 : Now add some water (consistency should be thicker) into mixer and grind well. Chutney ready

Step 12 : After 15 mins off the stove and leave it for 5 mins then take idli from plates with the help of spatula, and now it is ready to serve
